The first one is Mahon, a delicious Spanish cow cheese with a strong savory flavor.

Definitely on the firmer side, and more oily as opposed to creamy. Sharp and not particularly smelly, it takes kind of like a softer, mild parmesan. I would definitely check this out if you're looking for a cheese to eat by itself, as its texture and flavor (to me anyway) are really good unaccompanied.

If you haven't been to Art of the Table, come check it out. My favorites include Ossau Iraty, Drunken Goat, Serena 3 Sisters, Quicke's Cheddar and a chevre with lavender buds (can't think of the official name right now).

@Beth ooh, I didn't realize they had cheese there (though it makes sense). I will have to stop by next week when my current stock of new wedges is gone!
